Dr. Lotte Larsen, Aarhus University, Denmark
Lotte Bach Larsen is professor in food protein biochemistry at Department of Food Science at Aarhus University, Denmark. She is working within the area of Milk Genomics, and especially with understanding effects of molecular modifications on properties of food proteins. This is eg in relation to natural variations in their modifications and isoforms, as well as process-induced molecular changes and especially how to detect these and setting up methods for this. This included mass spectrometry based methods, like LC/ESI/MS and Triple Q MS. Further interests comprise milk quality in relation to cow physiology, proteolysis processes and milk functionality.
