Talk Topic: MFGM, physiological and health aspects
JTR's research concentrates on isolating, characterizing, and bio-assaying novel and understudied proteins, primarily from milk. The research encompasses biochemistry, metabolism, and molecular nutrition broadly, with specific attention to intracellular lipid transport and metabolism. JTR has conducted structural characterization of lipophilic proteins, particularly from the milk fat globule membrane (MFGM), including xanthine oxidase. Additional focus areas include the biological activity of lactadherin (a PS-opsonin), evaluation of specific milk proteins such as beta-casein, and the study of extracellular vesicles from milk, examining both their appearance and physiological functions. This work has been enhanced through ongoing collaborations with the dairy science community.
